Italian Chicken Sausage, Cannellini Bean & Tomato Stew

Serves 3–4

This comforting Italian-style stew combines juicy chicken sausages with tender vegetables, cannellini beans and a rich tomato broth. It’s a simple one-pan meal that’s hearty, healthy and perfect for cosy weeknight dinners.

Ingredients

  • 1 × 340 g pack HECK Chicken Italia Chipolatas

  • 2 sticks celery, thinly sliced

  • 1 onion, chopped

  • 2 carrots, peeled and sliced

  • 2 cloves garlic, crushed

  • 2 tbsp tomato purée

  • 1 × 400 g tin chopped tomatoes

  • 200 ml chicken stock

  • 1 tsp dried oregano

  • 1 × 400 g tin cannellini beans, drained

  • Flat-leaf parsley, chopped

  • Oil, for frying

  • Salt & black pepper

Method

  1. Brown the sausages
    Heat a little oil in a sauté pan over high heat. Add the sausages and brown quickly until golden. Remove and set aside.

  2. Cook the vegetables
    Add the celery, onion and carrots to the same pan. Fry for about 2 minutes until starting to soften.

  3. Add the aromatics
    Stir in the garlic and cook for about 10 seconds until fragrant.

  4. Build the stew
    Add the tomato purée, chopped tomatoes, chicken stock, oregano and drained cannellini beans. Stir well and bring to the boil.

  5. Simmer
    Return the sausages to the pan. Cover and simmer gently for 20 minutes until the vegetables are tender and the sausages are cooked through.

  6. Finish
    Sprinkle with chopped flat-leaf parsley and season with salt and black pepper to taste.
