This comforting Italian-style stew combines juicy chicken sausages with tender vegetables, cannellini beans and a rich tomato broth. It’s a simple one-pan meal that’s hearty, healthy and perfect for cosy weeknight dinners.
Ingredients

1 × 340 g pack HECK Chicken Italia Chipolatas

2 sticks celery, thinly sliced

1 onion, chopped
-
2 carrots, peeled and sliced

2 cloves garlic, crushed

2 tbsp tomato purée
-
1 × 400 g tin chopped tomatoes

200 ml chicken stock

1 tsp dried oregano
-
1 × 400 g tin cannellini beans, drained

Flat-leaf parsley, chopped

Oil, for frying

Salt & black pepper
Method

Brown the sausages
Heat a little oil in a sauté pan over high heat. Add the sausages and brown quickly until golden. Remove and set aside. -
Cook the vegetables
Add the celery, onion and carrots to the same pan. Fry for about 2 minutes until starting to soften. -
Add the aromatics
Stir in the garlic and cook for about 10 seconds until fragrant. -
Build the stew
Add the tomato purée, chopped tomatoes, chicken stock, oregano and drained cannellini beans. Stir well and bring to the boil. -
Simmer
Return the sausages to the pan. Cover and simmer gently for 20 minutes until the vegetables are tender and the sausages are cooked through. -
Finish
Sprinkle with chopped flat-leaf parsley and season with salt and black pepper to taste.
