1 half-baked ciabatta loaf

100g pesto

1 burrata

30g rocket

6–8 slices Parma ham

300g baby vine tomatoes

2 garlic cloves, crushed

6–7 fresh basil leaves
Method

Preheat oven - Set to 200°C.

Roast tomatoes - Place tomatoes and garlic in a small ovenproof dish and roast 10–15 minutes until softened.

Bake bread - Cook ciabatta according to packet instructions.

Cook rashers - Fry in a pan for 5 minutes until golden. Set aside.

Build base - Slice ciabatta, spread pesto over both sides.

Layer fillings - Add burrata, rashers, rocket, and roasted tomatoes.

Finish - Top with Parma ham and basil, close the sandwich.
