Ingredients
- 1 pack Simply Chicken Chipolatas
- 500g gnocchi
- 300g onion & chive cottage cheese
- 3 shallots, finely diced
- 100g frozen peas
- 70g spinach
- 100g asparagus
- 400ml chicken stock
- Salt and pepper
- Parmesan, to garnish
- 1 tbsp oil
- Sourdough, to serve
Method
- Heat the oil in a large pan over medium heat. Add the shallots and fry until softened.
- Cut the sausages into quarters and add to the pan. Cook until browned.
- Add the gnocchi and frozen peas, stirring to combine.
- Blend the cottage cheese until smooth.
- Pour in the stock and stir in the blended cottage cheese.
- Add the asparagus and spinach, then simmer on low heat for 10 minutes.
- Season with salt and pepper to taste.
- Garnish with parmesan.
- Serve with fresh sourdough and enjoy.
