HECK! Sausage, Cheese and Egg Muffins

What You'll Need

  • 1 pack HECK! 97% 10 Pork Sausages
  • 8 English muffins
  • 8 slices of cheese
  • 6 eggs
  • Splash of milk
  • Salt and pepper, to taste
  • 1 tbsp oil, for frying

Method

1. Preheat the oven to 200°C.

2. Remove the sausages from their skins and divide the meat into 8 equal portions. Shape each portion into a small, flat sausage patty.

3. Heat 1 tbsp of oil in a large frying pan over a medium heat. Add the sausage patties and cook for around 5 minutes on each side, or until golden brown and cooked through.

4. Crack the eggs into a medium bowl, add a splash of milk and season with salt and pepper. Whisk until smooth and combined.

5. Line a baking tray with parchment paper and pour in the egg mixture, spreading it into an even layer. Bake for 10-15 minutes, or until the egg is completely set and cooked through.

6. While the eggs are cooking, slice and toast the English muffins until golden and lightly crisp.

7. Once the egg is cooked, use a cookie cutter or round cutter to cut out 8 egg circles. Don't waste the leftover egg pieces - they're perfect for adding to any extra sausage patties!

8. Place a sausage patty on the bottom half of each toasted muffin, followed by a slice of cheese and an egg round. Add any leftover egg and sausage pieces as needed, then finish with the top half of the muffin.

9. Wrap each McMuffin individually in parchment paper. They can be refrigerated or frozen, making them perfect for busy mornings or an easy breakfast on the go.
