Ingredients

  • 400g HECK! Pork & Cheddar Sausages

  • 1 tbsp olive oil

  • 1 onion, finely diced

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp chilli flakes (adjust to taste)

  • 2 tbsp tomato purée

  • 150ml chicken stock

  • 200ml double cream

  • 50g grated parmesan

  • 75g sun-dried tomatoes, chopped

  • Small bunch fresh basil (or 1 tsp dried)

  • 400g pasta (penne, rigatoni, or fusilli)

  • Salt & black pepper

Method

  1. Cook pasta - Boil pasta until al dente, drain and reserve a little cooking water.

  2. Cook sausages - Remove skins, slice or break into chunks, fry in olive oil until golden. Remove and set aside.

  3. Base sauce - In the same pan, fry onion until soft, then add garlic, oregano, and chilli flakes. Cook for 1 minute.

  4. Tomato layer - Stir in tomato purée and cook out for 2 minutes.

  5. Sauce - Add chicken stock, double cream, parmesan, and sun-dried tomatoes. Stir well and simmer gently until slightly thickened.

  6. Combine - Return sausages to the pan, stir in pasta, add a splash of pasta water if needed for coating.

  7. Finish - Season with salt and pepper, garnish with fresh basil.
