1 tbsp olive oil

1 onion, finely diced

3 cloves garlic, minced

1 tsp dried oregano

1 tsp chilli flakes (adjust to taste)

2 tbsp tomato purée

150ml chicken stock
-
200ml double cream
-
50g grated parmesan

75g sun-dried tomatoes, chopped

Small bunch fresh basil (or 1 tsp dried)

400g pasta (penne, rigatoni, or fusilli)

Salt & black pepper
Method

Cook pasta - Boil pasta until al dente, drain and reserve a little cooking water.

Cook sausages - Remove skins, slice or break into chunks, fry in olive oil until golden. Remove and set aside.

Base sauce - In the same pan, fry onion until soft, then add garlic, oregano, and chilli flakes. Cook for 1 minute.

Tomato layer - Stir in tomato purée and cook out for 2 minutes.

Sauce - Add chicken stock, double cream, parmesan, and sun-dried tomatoes. Stir well and simmer gently until slightly thickened.

Combine - Return sausages to the pan, stir in pasta, add a splash of pasta water if needed for coating.

Finish - Season with salt and pepper, garnish with fresh basil.
