Ingredients
- 4 HECK! Chicken Rashers
- 2 large slices sourdough
- 2 eggs
- 4 tbsp cottage cheese
- 1 large avocado
- 1 tbsp black sesame seeds (for garnish)
- 1 tbsp chopped chives
- 2 tbsp oil (olive or avocado oil)
Method
Start by bringing a pot of water to a boil. Gently lower in the eggs and boil for 6½ minutes for a soft-set yolk. Once done, transfer to cold water, peel, and set aside.
Meanwhile, heat 1 tbsp oil in a large frying pan and toast both sides of the sourdough slices until golden brown. Lay 2 rashers across each slice and return to the pan, rasher-side down. Fry for around 5 minutes, until the chicken is cooked through and crispy.
In a bowl, smash the avocado and mix in the chopped chives. Season to taste with salt and pepper if desired.
To assemble, place each rasher-loaded sourdough slice rasher-side up on a plate. Top with 2 tbsp cottage cheese, a generous spoonful of smashed avocado, and a halved boiled egg.
Finish with a sprinkle of black sesame seeds for crunch and garnish.
