Chicken, Feta & Red Pepper Sausage Traybake

This easy traybake brings together juicy HECK! Chicken, Feta & Red Pepper chipolatas with roasted veg, butter beans and olives for a fresh, Mediterranean-inspired dish that practically cooks itself.
Ingredients
- 1 pack HECK! Chicken, Feta & Red Pepper Chipolatas
- 300g butter beans, drained
- 1 red onion, chopped
- 1 cucumber, chopped
- 1 lemon, sliced
- 100g mixed olives
- 1 aubergine, chopped
- 5g fresh parsley, chopped
- 5g fresh basil, chopped
- 5g fresh dill, chopped
- Olive oil
- Salt & pepper
Method

Prep the tray
Preheat the oven to 180°C (fan 160°C). Add the chipolatas, aubergine, red onion, butter beans, olives and lemon slices to a large baking tray. -
Season & roast
Drizzle generously with olive oil, season with salt and pepper, and toss everything together. Roast for 25–30 minutes, turning halfway, until the sausages are cooked through and the veg is soft and lightly golden. -
Finish fresh
Remove from the oven and scatter over the chopped parsley, basil and dill. -
Serve
Serve straight from the tray for a simple, flavour-packed meal.
Top Tip
Add the cucumber fresh at the end for a cool, crisp contrast, or swap it for courgette if you prefer everything roasted.
