Cooking Time: 30-35 minutes - Serves: 2
Ingredients:
- HECK Chicken, Red Pepper, Feta Chipolatas
- 200g-250g Baby Potatoes
- 100g Cherry Tomatoes
- 75g Pitted Black Olives
- 250g Roasted Red Peppers
- Fresh Parsley
- Olive Oil
- Salt & Pepper to season
Method:
- Pre-heat your oven to 180 fan
- Place the HECK sausages into a large oven-proof baking dish.
- Prick the potatoes all over with a fork then add to the baking dish along with the sausages, cherry tomatoes, black olives and roasted red peppers.
- Drizzle all over with olive oil and season with salt and pepper. Cook for around 20-25 minutes, until the sausages are cooked all the way through and the potatoes have softened in the centre.
- Finish off with some fresh chopped parsley. Serve up and enjoy!
