Chicken, red pepper, feta & potato traybake

Cooking Time: 30-35 minutes - Serves: 2

Ingredients:

  • HECK Chicken, Red Pepper, Feta Chipolatas
  • 200g-250g Baby Potatoes
  • 100g Cherry Tomatoes
  • 75g Pitted Black Olives
  • 250g Roasted Red Peppers
  • Fresh Parsley
  • Olive Oil
  • Salt & Pepper to season

Method:

  • Pre-heat your oven to 180 fan 
  • Place the HECK sausages into a large oven-proof baking dish.
  • Prick the potatoes all over with a fork then add to the baking dish along with the sausages, cherry tomatoes, black olives and roasted red peppers.
  • Drizzle all over with olive oil and season with salt and pepper. Cook for around 20-25 minutes, until the sausages are cooked all the way through and the potatoes have softened in the centre.
  • Finish off with some fresh chopped parsley. Serve up and enjoy!
