Chicken, orzo spinach salad with a kickin' protein dressing

Serves 6

Ingredients:

For the salad:

  • pack HECK! Simply Chicken Mince
  • 100g shiitake mushrooms, sliced
  • 250g orzo pasta
  • 200g vine tomatoes, halved
  • 10g grated parmesan
  • A big ol’ handful of fresh basil
  • A few good handfuls of spinach, chopped
  • 1 tbsp butter

For the dressing:

  • 2 ripe avocados
  • 400g cottage cheese
  • 3 tbsp avocado oil
  • Juice of 2–3 zesty lemons
  • 3 garlic cloves
  • 10g fresh basil
  • 15g parmesan
  • 1 tsp salt

 

Method:

Start by boiling your orzo in a pan of salted water for about 15 minutes until soft. While that’s bubbling away, get your HECK! chicken mince into a hot frying pan and cook for 10 minutes, breaking it up as it browns. Once done, set it aside.

Now blitz all the dressing ingredients in a blender until smooth and creamy—taste and adjust the lemon or salt if needed. If it’s looking a little thick, just splash in some water to loosen it. Pour it into jars and pop in the fridge until you're ready to serve.

In another pan, melt your butter and throw in the shiitake mushrooms. Sauté for around 5 minutes until soft, golden, and smelling amazing.

To build the salad, grab a big mixing bowl. In go your cooked orzo, chicken mince, chopped spinach and those juicy halved vine tomatoes. Pour over a good amount of that creamy dressing and stir until everything’s coated and happy.

Top it all off with the buttery mushrooms, a sprinkle of parmesan and a few fresh basil leaves for that final flourish. Boom. You're done.
