Ingredients
· 1 pack HECK! Chicken Italia chipolata, sliced
· 500g gnocchi
· 100g sundried tomato pesto
· 100g mozzarella, torn
· 200g Cherry tomato
· 1 red onion, roughly chopped
· 100g mixed olives
· 5g Italian seasoning
· 30g parmesan, grated
· 10g fresh basil to finish
· 1 tsp olive oil
Method
1. Preheat your oven to 200°C (180°C fan).
2. Cook your HECK! Chicken Italia Chipolatas as per pack instructions until golden and juicy, then slice into chunky pieces.
3. Bring a large pan of salted water to the boil and cook the gnocchi according to pack instructions. Drain once they float to the surface.
4. In a large baking tray, toss together the cooked gnocchi, sliced HECK! Chicken Italia, pesto, cherry tomatoes, red onion, olives and Italian seasoning. Mix well so everything’s coated in that rich, herby flavour.
5. Scatter over torn mozzarella and half the parmesan.
6. Bake for 20-25 minutes until bubbling, golden and slightly crisp at the edges.
7. Finish with the remaining parmesan and a generous handful of fresh basil before serving.
