Chicken & Avocado Breakfast muffin

Ingredients

·      1 Pack HECK! Simply Chicken Chipolatas, Mashed & made into 4 burger patties

·      4 English Muffins

·      2 Medium Avocado, Mashed 

·      50g spinach, Finely Chopped

·      10g Basil, Finely Chopped

·      2 Tomatoes, Finely Chopped

·      4 Slices of Smoked Cheddar

·      2 tbsp olive oil

·      1 lime, juice & zest

Method

1. To start mix all spinach, avocado, basil, tomato and lime juice to create your hearty style guacamole

2. Heat a pan with olive oil and cook your chicken patties until cooked through and finish of with slice of smoked cheddar on top.

3. Toast your muffins until preferred colour.

4. Spread your breakfast guacamole on the bottom muffin and then place you Heck simply chicken patty on top and finish with the top muffin
