Breakfast Casserole


Serves 6–8

Ingredients

  • 1 pack HECK 97% Sausages (10 pack)
  • 4 tins baked beans
  • 12 eggs, beaten
  • 5 tomatoes, sliced
  • 500g mushrooms, sliced and sautéed
  • 1 bag hash brown bites
  • 250g grated cheese
  • 50g fresh chives, chopped, to garnish

Method

  1. Preheat the oven to 180°C.
  2. Cut the sausages into bite-sized pieces and brown in a frying pan.
  3. Add the baked beans to a large ovenproof dish.
  4. Scatter over the sausage pieces and arrange the sliced tomatoes on top.
  5. Pour over the beaten eggs, then add the sautéed mushrooms.
  6. Sprinkle over the grated cheese.
  7. Top with the hash brown bites.
  8. Bake for 30–45 minutes, until golden and bubbling.
  9. Finish with chopped chives and serve.
