Serves 2
Ingredients:
· 1 large focaccia loaf
· 4 HECK Chicken Italia burgers
· 4 slices of mozzarella
· 2 tbsp green pesto
· 8 baby tomatoes
· 1 small shallot
· 2 handfuls of rocket
· 4–6 fresh basil leaves
· 2 tbsp red wine vinegar
· 2 tbsp butter
Method:
1. Start by firing up the barbecue. While it heats, finely chop the shallot and quarter the baby tomatoes. Combine them in a bowl with the red wine vinegar and set aside to marinate.
2. Take two burgers and press them together to form one large patty – repeat with the remaining two burgers to make a second large patty. Place both on the barbecue and cook for 10–12 minutes, turning occasionally until cooked through.
3. Meanwhile, cut your focaccia into two large square portions, then slice each in half horizontally to form burger buns. Lightly butter the cut sides and toast them on the barbecue until golden.
4. To assemble, spread 1 tablespoon of pesto on the bottom half of each focaccia bun. Add a layer of rocket, followed by a generous spoonful of the tomato and shallot mixture. Place the cooked chicken patties on top, then add a few basil leaves and two slices of mozzarella per burger.
5. Gently melt the mozzarella over the heat of the barbecue or using a blowtorch, then top with the remaining focaccia halves. Cut each burger in half for easier serving.
