Ingredients:
- 6 HECK! pork rashers
- 2 tortilla wraps
- 1 avocado, thinly sliced
- 100g vine tomatoes, halved
- 20g rocket
- 2 tbsp chilli jam
- 2 eggs
- 1 tbsp butter
Method:
- Get the BBQ hot and ready — medium heat is perfect for these smoky breakfast beauties.
- Lay 3 rashers across each tortilla wrap, slightly overlapping, and press them in gently.
- Place the loaded tortillas directly on the BBQ, rasher side down, and cook for about 5 minutes, until the pork is crisping up and the tortillas begin to char slightly. Flip and toast the other side for 1 minute.
- Meanwhile, place a small pan on the BBQ. Add the butter, let it melt, then crack in the eggs. Fry for around 2 minutes, or until the yolks are done to your liking.
- Remove the tortillas from the grill and layer with rocket, tomato halves, avocado slices, and the freshly fried egg.
- Finish with a generous drizzle of chilli jam for a sweet and spicy kick.
