BBQ breakfast taco

Serves 2

Ingredients:

  • 6 HECK! pork rashers
  • 2 tortilla wraps
  • 1 avocado, thinly sliced
  • 100g vine tomatoes, halved
  • 20g rocket
  • 2 tbsp chilli jam
  • 2 eggs
  • 1 tbsp butter

Method:

  1. Get the BBQ hot and ready — medium heat is perfect for these smoky breakfast beauties.
  2. Lay 3 rashers across each tortilla wrap, slightly overlapping, and press them in gently.
  3. Place the loaded tortillas directly on the BBQ, rasher side down, and cook for about 5 minutes, until the pork is crisping up and the tortillas begin to char slightly. Flip and toast the other side for 1 minute.
  4. Meanwhile, place a small pan on the BBQ. Add the butter, let it melt, then crack in the eggs. Fry for around 2 minutes, or until the yolks are done to your liking.
  5. Remove the tortillas from the grill and layer with rocket, tomato halves, avocado slices, and the freshly fried egg.
  6. Finish with a generous drizzle of chilli jam for a sweet and spicy kick.
