Sometimes you need some clean, fresh flavours to get you through the long winter days and to balance out the more indulgent comfort meals. Zesty Chicken works really well with the apple and walnuts, but with a lower calorie dressing, you’re not getting a hit on fats. Why not add a baked potato on the side of this salad and fuel yourself for a wintery afternoon hike?
Walnuts are rich in essential fats and can help to reduce the risk of a heart attack. Celery is very low in calories, so you can eat a lot and yet consume very few calories, it can therefore can help if you are trying to lose weight.
1 pack Zesty Chicken Chipolatas
5 sticks celery
3 eating apples
2 little gem lettuces
1 packet watercress
1 tbsp Dijon Mustard
4 tbsp fat free natural yoghurt
1 tbsp olive oil
juice of 1 lemon
Cook the Zesty Chicken chipolatas according to the packet instructions, and leave to cool. To make the salad, slice the oranges into segments along with the apples and celery. Mix together with the walnuts, then add the cooked sausages to the bowl.
For the dressing, whisk together the yoghurt, mustard, lemon juice and olive oil. Season to taste and pour over the salad before mixing thoroughly.
Serve on a bed of mixed little gem lettuce and watercress with a jacket potato on the side. Garnish with orange zest.
