Veggie Desserts originally created this recipe with our Thai Bites, but don't panic, they've just had a little change! You can now buy our Sweet Fusion Veggie Balls instead, same great taste just a new name.
For the noodle salad:
50g (1/2 cup) rice noodles
4 spring onions (scallions) cut into thin strips
3 carrots, spiralised or cut into thin strips
1 red pepper, deseeded and cut into thin strips
For the peanut dressing:
2 tbsp smooth peanut butter
1 tbsp sesame oil
1 tbsp rice wine vinegar
½ tbsp tamari (or soy sauce)
½ tbsp maple syrup
salt & pepper
HECK Thai Bites, cooked according to package instructions (now known as Sweet Fusion Veggie Balls)
2 tbsp unsalted peanuts
1 tsp sesame seeds
chilli flakes (to taste)
