Roasted cauliflower is a great medium for spicy flavours, and roasting it lends a really delicious nutty flavour to the dish. This offers an easy low fat meal, with yummy high protein Thai Turkey chipolatas. Spice up your dinner time!
1 pack Heck Thai Turkey chipolatas
1 red chilli
2 cloves garlic
1 tbsp soy sauce (substitute tamari for gluten free)
100 ml vegetable stock
Preheat the oven to 200°C.
Deseed and finely chop the red chilli. Finely chop the garlic cloves and mix with the chilli and soy sauce into the vegetable stock. Cut the cauliflower into small florets and place in a large bowl. Pour over the stock and mix everything together. Season with some freshly ground pepper and tip into a large roasting dish. Roast in the oven for 20-25 minutes, turning half way through, until the cauliflower is tender and beginning to char on the edges.
Meanwhile, grill the Thai Turkey chipolatas according to the packet instructions. To serve, pile several generous spoonfuls of the cauliflower into a wide shallow bowl and top with 5 Thai Turkey chipolatas.
If you prefer your food with more of a spicy kick, add another chopped red chilli or a teaspoon of dried flaked chillis when preparing the cauliflower to roast.
