1 pack Sweet Fusion Veggie Bangers
1 tbsp rapeseed oil
1 clove garlic crushed
1cm piece fresh ginger, peeled and grated
½ tsp Chinese Five Spice
100gm broccoli florets
100gm sugar snap peas
1 pak choi, chopped (keep stalks and leaves separate)
1 courgette grated
100gm bean sprouts
2 tbsp reduced salt soy sauce
1 tbsp mixed seeds
To cook the Sweet Fusion Veggie Bangers, pre-heat the oven to 200°C (fan 180°C) and bake for 12-14 minutes turning once or twice during cooking to ensure all over colour.
While the bites are cooking, prepare all the vegetables so that once you start cooking, everything is ready to go. Heat the oil in a deep frying pan or wok over a high heat and add the garlic and ginger. Cook for a minute or so, then add the Chinese Five spice. Reduce the heat to medium-high and add the broccoli florets, sugar snap peas and pak choi stalks along with 2 tbsp water. Cook for 3-4 minutes then add the grated courgette and pak choi leaves along with the soy sauce.
Finally add the bean sprouts and the cooked Sweet Fusion Veggie Bangers for a last couple of minutes before piling up into 2 bowls and serve sprinkled with mixed seeds
