Chickpeas contain folate, which could reduce your risk of heart disease, and manganese - important for good bone strength and controlling blood sugar.

Turmeric is arguably the most powerful herb on the planet, and provides us with manganese, iron, fibre, vitamin B6, potassium, vitamin C and magnesium. It may also alleviate inflammation which is involved in many chronic diseases and the antioxidants it contains help destroy harmful free radicals in our bodies.

Super Greens with a Mexican Chickpea Mole

Serves 4


2 packs HECK Supergreens Bites

2 tablespoons light olive oil

1 red onion, finely chopped

4 cloves garlic, grated or crushed

2cm ginger, grated

1 teaspoon chilli flakes

2 tablespoons cumin seeds

2 tablespoons turmeric

Splash of water

2 x 400g tins chopped tomatoes

2 tablespoons cocoa powder

1 x 400g tin chickpeas (including the chickpea water)

½ green pepper diced

½ yellow pepper diced

2 tablespoons parsley, plus extra for garnish

Cracked black pepper


Preparation time – 35 minutes

Cooking time – 45 minutes

Pre-heat the grill to medium


Place the olive oil, chopped red onion and chopped peppers in a large wide saucepan and cook gently for 5 minutes until the onions are soft but not brown.

Now add the garlic, ginger, cumin and chilli. Cook for a further minute on a low heat, then add the turmeric and a very small splash of water and cook for another minute, taking care not to let the pan get too dry.

Next add the tomatoes, cocoa powder, chickpeas (including the chickpea water) and diced peppers. Bring to the boil, and then simmer on a low heat for 30 minutes until the sauce is thick.

Finally stir in the 2 tablespoons of parsley and some black pepper, and set aside.


Supergreens Bites

Place the bites onto a grill tray and lightly brush with the light olive oil then grill for 10 minutes, turning halfway through, until golden brown and cooked through.


To serve

Share the chickpea mole into four warm bowls, then place four super green bites on top of each and garnish with chopped parsley.


Optional – serve with some warm corn bread or a crisp leaf salad.
