1 red onion, chopped
12 HECK Chicken Italia Chipolatas
1 mango, cut into chunks
1 yellow or red pepper, deseeded and cut into chunks
1 tbsp olive oil
2 tsp jerk seasoning
400g can chopped tomatoes
1 vegetable stock pot
Small handful flat-leaf parsley leaves, chopped
Tip: Swap the mango for potato to make this a more filling meal.
Woman Magazine featured a flavoursome recipe using HECK Chicken Chipolatas in the 20 March edition of the magazine. This dish is a vibrant take on everyday sausages, great for spicing up your regular evening meal and every family member at the dinner table can enjoy it!
1) Heat the oven to 200°C, Gas 6. Put the chopped onion, chipolata sausages, mango and pepper chunks into a baking tray.
2) Add the oil and jerk seasoning and toss to mix. Roast in the oven for 20 mins.
3) Add the can of tomatoes and the stock pot mixed with 200ml water. Stir to mix and cook in the oven for a further 15 mins. Scatter over the parsley to serve.

This recipe was made using our Chicken Italia chipolatas, but works equally as well using our other Chicken varieties. Spring, Zesty, Simply, Smoky Paprika or Naked Chicken. You could also try it using our Thai-Style Turkey chipolatas!
