SMOKY SAUSAGE & CHIPOTLE BEANS WITH BAKED EGGS

Smoky Sausage & Chipotle Beans with Baked Eggs

Serves 4

Ingredients

1 pack of HECK Smoky Paprika Sausages

1 tablespoon of light olive oil

1 finely sliced red onion

2 tablespoons of chipotle paste

800g tinned mixed beans  

800g chopped tomato with chilli

20g white sugar

4 free-range large eggs

2 tablespoons of chopped flat leaf parsley

sour cream

1 pack of whole-wheat tortillas

Steps

Heat the oil in a deep frying pan and brown off the sausages.

Add the sliced red onion and cook for about 5 minutes until the onions are soft. Add the chipotle paste, beans, tomatoes and sugar, and simmer for 15-20 minutes until thickened. Season to taste.

Make 4 holes and crack an egg into each one.

Cover with foil and bake in the oven at 180 degrees for 15 minutes until the eggs are cooked to your liking.

 

To serve

Take the bake from the oven and serve onto the table and sprinkle over the chopped parsley.

 

Warm the whole-wheat tortillas and serve on a side plate with a bowl of sour cream.

This recipe uses Smoky Paprika Chicken chipolatas, but works equally well with our other Chicken sausages! Spring, Simply, Naked, Italia, Zesty or Spring. You could also try it with out Thai-Style Turkey chipolatas!
