Make a tasty, cafe-style brunch in the comfort of your own home. If you’re short on time and want something healthy, whip this up!
2 HECK Vegan Breakfast Sausages
5 vine tomatoes washed
2 slices of rye bread
½ an avocado
1 tsp of red chili fakes
½ a lime squeezed for the juice
Put a drop of oil in a frying pan and place on a medium to high heat. Add your sausages to the pan. Cook off for 10-15 minutes, remembering to turn occasionally so they are golden.
On a chopping board, cut the avocado in half. Remove and discard the stone. Using a sharp knife, cut the avocado horizontally then vertically to create little cubes. Squeeze the outer skin so the fleshy green cubes empty out into a small mixing bowl.
Add the lime juice, a splash of oil, the chili flakes and a pinch of salt and combine with a folk. This will result in a much smoother in texture.
Put your rye bread in the toaster or under the grill for 1-2 mins.
Transfer to a plate and spread the avocado over your toast. You may want to butter it first, but it’s completely up to you.
Remove sausages from the hob and add to your plate along with the tomatoes.
If you’d like to tone down the spice in your avocado, serve with a dollop of Greek yoghurt.
