SHAKSHUKA

A really easy home cooked meal if you're a vegetarian, or if you’re entertaining for one. It can also be easily adapted for meat eaters as you could replace the Vegan Breakfast Sausages with any other HECK sausage! It’s a crowd pleaser and even better, it’s healthy & nutritious!

Psst... just make without the egg if you'd like this dish to be suitable for vegans.

Shakshuka

Serves 1
Prep time: 8-10 mins
Cook time: 20 mins

Ingredients

1 HECK Vegan Breakfast Sausage

1 tbsp of olive oil

¼ white onion

½ red pepper

1 egg

½ tin of chopped tomatoes

½ tbsp of tomato puree

¼ clove of garlic

½ tsp of ground cumin

½ tsp of cayenne pepper

Salt, to taste

Black pepper to taste

Steps

  • Put a drop of oil in a frying pan and place on a medium to high heat. Add your sausages to the pan. Cook off for 10 minutes, remembering to turn occasionally so they are golden.
  • Dice the onion and red pepper on a chopping board.
  • Finely chop the garlic, or if you want to take a shortcut you can use prepped or dried garlic.
  • Put a splash of oil in a frying pan and place on hob on a medium heat. Add the onions and peppers and fry for 2-3 minutes until the onions start to go clear.
  • Add the garlic & spices and cook for another 2 minutes.
  • Remove sausages from the pan and using a pair of scissors, cut into slices directly into the pan with the peppers.
  • Pour in the tinned tomatoes, add the puree, season, and bring to the boil.
  • Reduce the temperature and cover. Simmer for 8-10 minutes.
  • In the pan you used for the sausages, crack an egg and fry for about 5-8 minutes until they are done to your liking. If you prefer, you may want to poach the egg.
  • Plate up the shakshuka mix with your egg on top.
  • Serve with a handful of spinach and get tucked in!
