Think carrots are for rabbits? Think again…. They provide one of the richest sources of beta carotene  in the diet, cooking carrots also helps to improve the absorption of carotene as does serving them  with a little fat. Avocado is very nutritious, it is rich in vitamin E, this may reduce the risk of heart  disease. Nutritional dynamite!
