This is a filling and nutrient packed meal. Pulses such as butter beans and chickpeas provide an array  of nutrients to keep us healthy; it is possible that having pulses in the diet can reduce high  cholesterol. As they are digested slowly, they give a gradual rise in blood sugar, and the fibre they  provide keeps us full for longer and helps our digestive system work optimally.

Sausage, Butter Bean and Tomato Salad with  Chorizo & Sherry Vinegar Dressing

Serves 2


HECK Smoky Paprika Sausages

125g tinned butter beans

125 tinned chick peas

125g cherry tomatoes

1 medium courgette

1 red pepper

2 spring onions sliced

1 tsp fresh chives finely chopped

Sea salt to taste



Pinch of chilli flakes

One sprig of thyme

30ml sherry vinegar

15g diced chorizo

Approx. 10 fresh basil leaves finely chopped

1 tsp fresh chives finely chopped

10ml olive oil

1 small clove garlic peeled and crushed




  1. Place the sausages under a medium grill and cook for 12-14 mins.
  2. As the sausages are cooking place a griddle pan over a high heat and as the pan heats up cut the red pepper into eight and slice the courgette into thin strips. Season veg with a little sea salt and place in the pan – peppers skin side down for about 3-4 mins and courgettes 2 min each side.  Remove from the heat and set aside.


  1. Now for the dressing. In a small pan add the the olive oil, garlic and chorizo and cook for 2 mins, then add the sherry vinegar.  Give everything a good stir, remove from the heat and add all other ingredients.  Put to one side.
  2. In a bowl add the butter beans, chickpeas and tomatoes. Mix in half the dressing and season to taste.
  3. Divide the bean mix between two plates then place the sausages on top and half of the chargrilled veg. Drizzle the remaining dressing over the top and garnish with spring onion and chive.
  4. Serve with a crisp green salad.

This recipe uses Smoky Paprika Chicken chipolatas, but works equally well with our other Chicken sausages! Spring, Simply, Naked, Italia, Zesty or Spring. You could also try it with out Thai-Style Turkey chipolatas!
