These sausages served up with perfect scrambled eggs, roasted tomatoes and a slice of toast are a great breakfast option.  The sweetness of the marmalade in the sausages will balance the bitterness of the tomatoes, set off with the creamy scrambled eggs this will be the perfect start to anyone’s day.

Pork & Marmalade Sausage Breakfast

Pack of Pork & Marmalade sausages

6 free range eggs

25g butter

200g tomatoes

Spritz of olive oil

3 slices of thick toast


Cook the sausages according to the packet instructions. 


Slice the tomatoes in half and put into a roasting tin sliced side up.  Season with a sprinkle of salt and a generous grind of black pepper, then spritz with some olive oil.  Roast at 180° for 20-25 minutes until charred.


To make the scrambled eggs, whisk the eggs together in a bowl.  Melt the butter in a non-stick saucepan over a medium heat and as it starts to froth, pour in the eggs.  Using a wooden spoon or non-stick spatula stir slowly and continue to stir as the eggs cook.  Remove from the heat once the eggs are still slightly runny as they’ll carry on cooking in the pan.


Plate up a couple of sausages, scrambled eggs and tomatoes and serve with a slice of lovely thick toast.
