You might be thinking that the world doesn’t need another avocado toast recipe, but this one’s a simple mix of flavours that work really well together. The great thing is that this ticks all the boxes with the building blocks of a good balanced meal, so it will set you up perfectly for the day.
Pack Naked Chicken sausages
1 tbsp olive oil
2 tbsp chopped parsley
2 ripe avocados
Bread for toasting
Cook the Naked Chicken sausages over a medium heat with the olive oil for 10 minutes, breaking up the sausages with a wooden spoon to give bite sized lumps. Make sure to turn the sausages regularly so they cook evenly.
After 10 minutes add the zest of both limes and juice of 1 lime plus the parsley to the chicken and cook for a further 2-3 minutes.
Mush the avocados with a fork and the juice of the second lime. Season with a little black pepper then spread over the toast of your choice. Finally top with the Naked Chicken and enjoy!
