MAJESTIC SAUSAGES ON THE BBQ WITH GRILLED VEGGIE KEBABS AND LENTIL SALAD

If the sun is shining on 19 May, you’ll be wanting to keep things simple if you’re celebrating the Royal Wedding with a #royalsausage on the grill.  We suggest BBQing your sausages and serving with veggie kebabs that can cook alongside, and an easy lentil salad…. leaving you plenty of time to raise a glass to Harry & Meghan with your friends!

Majestic sausages on the BBQ with grilled veggie kebabs and lentil salad

Serves 4

Ingredients

8 Majestic sausages

4 white bread rolls (GF if needed)

1 large courgette

1 red pepper

8 mushrooms

2 packets of ready to eat lentils (green or Puy)

1 lemon

Bunch of fresh mint

Bunce of fresh parsley

Olive oil

Balsamic vinegar

Dijon mustard

Steps

To make the veggie kebabs, slice the red pepper and the courgette each into 8 pieces.  Thread onto skewers with the mushrooms and brush with a little olive oil.  Cook on the BBQ turning regularly whilst the sausages cook.  Make sure the sausages are cooked through and piping hot before eating.

To make the salad, whisk together the zest and juice of a lemon, 3 tbsp olive oil, 1 tbsp balsamic vinegar and 1 tbsp Dijon mustard.  Season to taste.  Finely chop the mint and parsley then mix with the dressing over the lentils and leave until ready to serve up.

Pop 2 sausages in each bread roll (the softer and fluffier the better in our opinion!) and serve with a veggie kebab and the lentil salad on the side.  Don’t forget to add any relish or sauce and definitely don’t forget to wash down with some celebratory chilled fizz.
