If you’re not sure that sauerkraut is for you, but you are still keen to benefit from the gut health benefits that eating sauerkraut brings, making a low fat Kraut Slaw is a good place to start. The flavours of sauerkraut are made milder with the yoghurt dressing and the fresh grated carrots bulk up the dish.
300g grated carrot
2 tbsp natural yoghurt
½ tbsp. low fat mayo
Mix all the ingredients together in a bowl, and serve with cold meats, jacket potato or in a sandwich.
Top with a snippet of fresh chives.
