Heck! Veggie Balls with Mixed Salad

A super quick and easy light lunch idea, perfect for this warm summer weather.


Heck! Veggie Sausages, you choose which flavour…

½ a bowl of breadcrumbs

2 red peppers

1 spring onion

1 bunch fresh asparagus spears

1 bag of mixed salad leaves

A handful of cherry tomatoes

½ a cucumber


  • Remove the skins from the vegetarian sausages and cut each sausage into about 5 pieces.
  • Roll each piece into little balls, lightly coat them in breadcrumbs and then gently fry off in a little oil along with the asparagus.
  • Slice up the cucumber, tomatoes, red pepper and spring onion and mix into the salad leaves along with the cooked veggie balls and asparagus.
  • Serve up and enjoy!
