HECK Sweet Fusion Veggie Bangers and Couscous Buddha Bowl

Serves 2

Ingredients

1 pack HECK Sweet Fusion Veggie Bangers

1 courgette

1 yellow pepper

2 tomatoes

200gm couscous

200ml boiling water (or a light vegetable bouillon)

Generous handful salad leaves

1 tbsp soy sauce

1 tbsp runny honey

1 tbsp olive oil

Mixed seeds to finish

Steps

Bake the HECK Sweet Fusion Veggie Bangers according to the packet instructions.  Slice the courgettes into thick slices and the peppers and tomatoes into chunks and drizzle with a little olive before spreading evenly over a baking tray. Roast in the oven at the same time for 20 minutes.

Pour the boiling water over the couscous in a bowl and leave under a dry tea towel for 5 minutes. Fluff with a fork and mix through the roasted vegetables once cooked. To assemble the bowl, half fill with the couscous and roasted vegetables, then add Sweet Fusion Veggie Balls and salad leaves to make up the other quarters of the bowl.

For the dressing, shake the soy sauce, honey and olive oil in a jar and pour over to taste.  Finish with seeds of your choice and tuck in!
