1 pack Sweet Fusion Bangers
½ punnet cherry tomatoes, halved
½ punnet baby mushrooms, chopped
1 tbsp crème fraiche
4 slices grainy bread
To cook the Sweet Fusion Bites, pre-heat the oven to 200°C (fan 180°C) and bake for 12-14 minutes turning once or twice during cooking to ensure all over colour.
In a non stick sauce pan, melt a knob of butter over a medium heat and add the chopped mushrooms. Cook for 3-4 minutes then add the cherry tomatoes and cook for a further 3-4 minutes. Whisk the eggs with the crème fraiche in a bowl and then pour into the saucepan to scramble. Move the eggs around to stop them sticking or cooking too quickly, and remove the pan from the heat after 5-6 minutes once the eggs have all but scrambled.
Toast the bread and pop 2 slices on each plate along with the Sweet Fusion Bites. Top the toast with scrambled eggs and get the day started with a bang!
