The traditional full English breakfast is delicious, but can be time consuming to cook and then wash up all the pans afterwards!  This breakfast frittata using HECK Super Slim Sausages  is a one pot dish that has a nutritious balance and includes 2 of your “5 a day”.  If you have a glass of fresh fruit juice alongside a cuppa, you’re over half way there and it’s only breakfast time #winning

Eggs provide protein and vitamin D - not many foods contain vitamin D, especially important in the winter when we can't get it from the sun.

Mushrooms are low in calories and can therefore be a very useful food to include in your diet if you are trying to lose weight.

HECK Super Slim Sausages Breakfast Frittata

Serves 4


1 pack HECK Super Slim Sausages 

Low cal cooking spray

300gm baby button mushrooms, halved

300gm mini tomatoes, halved

8 large eggs

1 tbsp chopped chives

60gm fresh rocket, roughly chopped

Prep time 10 mins

Cooking time 15 mins



To cook the HECK Super Slim Sausages , grill under a medium heat for 12-14 minutes turning occasionally.  Once cool enough to handle, slice thickly on the diagonal and leave to one side.

In a large shallow frying pan, sauté the slice mushrooms and mini tomatoes over a medium heat for 5 minutes until nearly cooked.  Add the sliced sausages.

Whisk the eggs in a bowl, combining the chives and rocket through the eggs, with a couple of grinds of black pepper.  Pour the egg mix over the mushrooms, tomatoes and sausages and cook over a medium heat for 5-7 minutes.  Once the bottom of the frittata has set, remove from the heat and grill under a medium-high grill for around 3-4 minutes until the top is golden and the frittata is set through.

Turn out the frittata and cut into quarters to serve, with any leftover rocket or tomatoes on the side.
