Dried apricots are so nutritious - containing beta carotene, iron, fibre and potassium they certainly pack a punch. The celery in this recipe may help to lower cholesterol and blood pressure and it’s low in calories too so great for the waistline.

HECK Spring Chicken Curried Sausage Salad in Lettuce Cups

Serves 4


Preparation time – 10 minutes

Cooking time – 16 minutes

1 pack HECK Spring Chicken sausages

150g fat free natural yoghurt

20g dried apricots, chopped

4 teaspoons of medium heat curry powder

1 lime, juiced

Pinch of cayenne pepper

Freshly ground black pepper

2 celery sticks, chopped

3 spring onions, chopped

1/2 mango, peeled and chopped

3 baby gem lettuce, leaves separated


Pre-heat the grill to medium heat.

Place the chicken sausages onto the grill tray and grill on each side for 8 minutes, remove and leave to cool then cut into slices at an angle and chill in the fridge until required.


Preparing the salad

Mix together the yogurt, apricots, curry powder, lime juice, cayenne pepper and some freshly ground black pepper, and mix in a large bowl.

Now add the chicken sausages, celery, spring onions and mango.  Mix thoroughly and keep to one side ready to serve.


To serve

Place four baby gem leaves curved upwards onto each serving plate, and spoon equal amounts of the sausage salad mix into each.


This recipe was made using our Spring Chicken chipolatas, but works equally as well using our other Chicken varieties. Italia, Zesty, Simply, Smoky Paprika or Naked Chicken. You could also try it using our Thai-Style Turkey chipolatas!
