HECK Sausage and Grilled Jumbo Mushroom Stacks with  Caramelised Red Onion & Goats Cheese

Serves 4


8 jumbo flat mushrooms

1 pack HECK Naked pork sausages

2 tbsp light olive oil

2 medium red onions sliced

100ml balsamic vinegar

50g rocket

100g goats’ cheese crumbled

Black pepper

Crusty wholemeal bread to serve

Preparation time – 20 minutes

Cooking time – 30 minutes

Pre heat oven to 180c  / Gas mark 4



Firstly add the sliced red onions into a pan with 1 tablespoon of olive oil and slowly cook on a low heat for 10 minutes to soften.  Add the balsamic vinegar and slowly reduce until the onions take on a chutney texture, remove from the heat keep to one side.

Place the mushrooms on an oven tray and brush with the remaining olive oil.  Add a few grinds of black pepper.

Equally share the cooked red onion on top of each mushroom.  Take the sausages from the pack and mix in a bowl.

Split the sausage mixture into 8 equal pieces and then form into pattie shapes slightly smaller than the mushrooms.

Place a sausage pattie on top of each mushroom and red onion stack.

Sprinkle over the goats’ cheese and place the mushrooms into the oven.  Bake for 15- 20 minutes.


To serve

Place the mushrooms onto a serving dish and sprinkle over the rocket leaves.  Serve with crusty wholemeal bread
