A speedy and straightforward family meal but with a bit of a twist roasting the apples along with the chilli, which will balance the sweetness of the apples and the sausages themselves. Throw in the oven with minimal prep and enjoy round the table with the kids!
1 pack HECK Pork & Apple sausages
800g baking potatoes (unpeeled)
3 red eating apples (such as Gala or Braeburn)
1 tbsp olive oil
1 tsp dried crushed chilli flakes
Fresh thyme sprigs (4-6)
Heat the oven to 200°C.
Cut the baking potatoes into chunks around 2cm in size and pop into a large roasting tin, along with the sausages. Core the apples and slice into wedges adding to the other ingredients in the tin. Now pour over the olive oil and the chilli flakes, add a generous grind of black pepper and mix everything together with your hands to ensure the oil and chilli is evenly distributed.
Tuck the sprigs of thyme amongst the sausages and then pop in the oven for 35-40 minutes. After 20 minutes, turn everything over to give an even colour and return to the oven. When the sausages, potatoes and apples have turned a deep golden colour and starting to caramelise, you’re ready to serve.
Why not add some peas and carrots on the side and every plate’s a winner!
