HECK NAKED PORK, SWEET POTATO AND EGG HASH

HECK Naked Pork, Sweet Potato and Egg Hash

Ingredients

600 gm sweet potatoes peeled

1 tsp red chilli flakes

1 tbsp olive oil

1 tbsp soy sauce

Pack of Naked Pork sausages

bunch spring onions

4 free range eggs

Steps

Preheat the oven to 200°C.  Cut the sweet potatoes into 3cm chunks.  Toss in a large roasting tin with the olive oil, soy sauce and chilli flakes (add more chilli to taste if you like to start the day with a kick!).  Roast for 10 minutes.

Now break the sausages into similar size chunks and add to the sweet potatoes.  Mix the sausages in amongst the sweet potatoes and replace in the oven for a further 15 minutes until everything starts to colour.

Chop the spring onions into approx. 3 cm lengths including the green elements.  Remove the roasting pan from the oven and mix the onions through. Create 4 ‘wells’ in the potato and sausage mixture, then crack an egg into each and return to the oven for a further 4-5 minutes and the eggs are cooked.

Serve up with a Virgin Mary on the side and attack the day…  #BOOM
