HECK NAKED PORK AND EGG CUP CAKES

These easy to make little ‘cup cakes’ are a fun family breakfast option and can even be eaten cold from the fridge if you’re in a hurry first thing in the morning!  Serve with avocado on the side for a great start to the day.  This makes 6 ‘cup cakes’ so in theory could serve 6 people, although it depends on everyone’s appetites.  Probably perfect for a family of 4 where mum and dad have 2 each and the (young) kids just 1 each…

HECK Naked Pork and Egg Cup Cakes

Serves 6

Ingredients

1 pack of HECK Naked Pork Sausages

6 free-range large eggs

2 avocados

Preparation time 5 mins

Cooking time 15 mins

 

Steps

Line a deep 6-hole silicon or non-stick muffin tin with a pork sausage in each.  Press down and up at the sides to create a well.  Bake in the oven at 180°C for 5 minutes, then remove and carefully crack an egg into each.

Return to the oven and bake for a further 10 minutes until the eggs are just set. Carefully turn out the ‘cupcakes’ and serve with sliced avocado on the side.
