HECK NAKED CHICKEN, CHILLI AND LIME TACOS

A recipe that’s full of flavour and perfect for all the family.  You can easily adjust the levels of chilli so it’s not too hot, or ramp them up if you like it spicy!  Serve with boiled rice and peas and add some crisp green salad if you’re having as a main meal.

The cherry tomato salsa is so easy to make and will keep for a couple of days in the fridge to serve with some sausages or burgers at another meal.

HECK Naked Chicken, Chilli and Lime Tacos

Serves 4

Ingredients

Taco shells x 8

Pack of Naked Chicken sausages

2 x red chillies deseeded and finely chopped

2 x cloves garlic crushed

6 x Spring onions

2 x Limes (zest and juice)

½ x Red onion finely chopped

1 tbsp chopped coriander

1 tbsp chopped chives

300gm cherry tomatoes

½ tbsp. olive oil

½ tbsp. balsamic vinegar

½ tsp ground cumin

½ tsp dried oregano

½ tsp chilli powder

½ tsp paprika

Low fat crème fraiche

Preparation time 10 mins

Cooking time 20 mins

 

Steps

 To make the taco spices, mix together the ground cumin, oregano, chilli powder and paprika. 

Cook the chilli, garlic and red onion in a little sunflower oil (or using lo-cal spray) until it softens.  Then add the Naked Chicken sausages and the taco spice mix to the pan, using a spoon to break up the meat as it cooks.  Add 2 tbsp. of water to the pan, and let it bubble along until the chicken is cooked through, about 12 minutes on a medium heat.  Add the zest of both limes, plus juice on one lime and leave off the heat for a couple of minutes.

To make the salsa, chop the cherry tomatoes into halves and drizzle with ½ tbsp. each of olive oil & balsamic vinegar.  Roast in the oven at 170° for 15 minutes then add the chopped spring onions, coriander and chives with the juice of the 2nd lime once the tomatoes have cooled.

Serve by filling the taco shells with a layer of tomato salsa, top with the chicken mixture and finally add a teaspoon of crème fraiche.
