The pumpkin seeds in this recipe provide our bodies with protein, zinc and magnesium. Seeds are such a powerhouse for nutrients, we should include them in our diets more often. Magnesium has been shown to be one of the minerals we are likely to be deficient in, another good reason to tuck into this recipe. Contrary to popular belief, eggs are very nutritious. They contain protein, fats, vitamins and minerals. The yolk contains many of the B vitamins and vitamins A, D and K; they are a valuable addition to a healthy diet. 

HECK Fair & Square Sausages with Pickled Scotch Egg and Chorizo & Watercress Salad

Serves 4
Gluten free recipe


Preparation time – 20 minutes

Cooking time – 18 minutes


1 pack of Heck Fair & Square sausages

4 pickled eggs

1x 85g bag watercress leaves

2 tbsp extra virgin olive oil

100g chorizo cut into chunks

50g toasted pumpkin seeds

Optional – 1 x 360g jar piccalilli


Gluten free – If you choose to serve with piccalilli please check that it does not contain wheat.


Take each of the square sausages and gently press down with your fingers to increase their size by around 5cm on each side (or you could put a little greaseproof paper on the top and use a rolling pin to gently push down on the patties).

Place a pickled egg into the centre of each square and wrap the sausage over the egg and enclose it into a parcel.  Form each parcel and compress to form a scotch egg shape.

Now place the 2 tbsp of olive oil into a non-stick pan and heat until the oil is hot.  Add the scotch eggs and fry in the pan to get a rich deep colour, After 7 minutes reduce the heat and continue cooking the eggs for a further 7 minutes.

Once the eggs are cooked, remove from the pan and keep to one side.

Using the same pan, return to a medium heat and when the oil is hot add the chorizo chunks and sauté for 4 minutes allowing the chorizo to release its natural oils.

Remove the pan from the heat and leave to cool, at this stage add the scotch eggs to the pan and baste with the chorizo oil.


To serve

Take four plates and add a handful of watercress onto each plate.  Slice the scotch eggs in half and place two halves on each plate.

Drizzle the chunks of chorizo and oil over the watercress leaves and the scotch eggs.  Sprinkle over some toasted pumpkin seeds and serve.


Optional – serve with a pot of piccalilli on the side.

This recipes is made using our Fair & Square patties, but works equally as well if you use our Naked Pork or Naked Chicken sausages!
