Beans are a source of the B vitamin folate, vitamin A and vitamin C which helps to fight infection. Broccoli is a source of vitamin C which has antioxidant properties, folate which is beneficial for the red blood cells and vitamin K which helps blood clotting and is needed for the strength of the bones and teeth.
1 pack of HECK Chicken Italia burgers
1 pack of trimmed fine beans
1 pack sprouting broccoli
2 lemons zest removed and finely chopped
1 pack flat leaf parsley leaves finely chopped
2 cloves garlic crushed
100ml light olive oil
Ground black pepper
1 bag of baby new potatoes
1 handful of chopped mint
Preparation time – 15 minutes
Cooking time with optional potatoes – 52 minutes
Preheat the oven to 180c /gas mark 4
In a bowl add the finely chopped lemon zest, the chopped parsley, crushed garlic, olive oil and a few twists of ground black pepper. Mix together and set aside ready to serve.
Cooking of the burgers
Simply place the burgers under grill on medium setting and cook for 15 minutes until the burgers are golden brown, and cooked through. Once cooked set aside ready to serve.
Cooking of the vegetables al dente
Bring a pan of water to the boil and add the broccoli and cook for 40 seconds, now add the fine beans and cook for a further 50 seconds, drain the vegetables from the water into a colander and return to the pan and mix through a tablespoon of the gremolata and a twist of black pepper.
Place the dressed vegetables equally onto four serving plates, and place on top the grilled burgers.
Drizzle over a little of the gremolata and serve.
Optional – Serve with boiled baby new potatoes cooked for 35 minutes scattered with chopped fresh mint and a twist of black pepper.
This recipe is made using our Chicken Italia burgers, but works equally as well if you re-shape our Naked Chicken sausages into burger form!
