CHICKEN & SAGE BAUBLES WITH CREAM SAUCE

If you’ve ever been to Ikea, you’ll have seen (and probably enjoyed!) their famous meatballs with cream gravy…. But why not try this version which is much lower in calories, and jam-packed full of home made goodness!  Go the whole hog and serve up with sprouts and chantenay carrots and some baby roasted potatoes for a festive feast….

Chicken & Sage Baubles with Cream Sauce

Cooking time 40 minutes

Ingredients

2 packs HECK Chicken, Sage & Onion Baubles

1 medium onion finely sliced

Lo-cal oil

1 tbsp balsamic vinegar

450ml chicken stock

150g low fat cream cheese

1 tbsp cranberry sauce

Steps

Cook the Baubles according to the packet instructions.  While they are cooking, get the baby potatoes into an oven proof tin to roast – spritz with a little lo-cal oil, season and roast in the oven for 20 mins at 180°C.  Give them a good shake about half way through cooking time.

For the gravy, cook the onions over a medium heat with lo-cal oil for about 5 minutes.  Add the balsamic vinegar and cook for a further 5 minutes until soft and gently caramelised.  Turn the heat up and add the chicken stock, cream cheese, cranberry sauce and season.  Simmer for approx. 5 minutes and set to one side until ready to serve.  Taste and adjust seasoning if needed.

Slice the tops off the sprouts and carrots, then steam together for about 10-12 minutes until cooked (we used a mix of orange, white and purple for maximum colour impact!)

To serve, use a big platter and pop the potatoes at one end, veggies in the middle and the Baubles at the other end covered with the gravy.  Tuck in and enjoy!
