HECK BOLLYWOOD BANGERS WITH A CHILLI & MANGO SALSA AND YOGHURT DIP

Mangoes are really nutritious - they provide us with vitamin C, carotene and fibre. Cucumber is really high in water, which helps us in hot weather to top up our fluid intake.

HECK Bollywood Bangers With A Chilli & Mango Salsa And Yoghurt Dip

Ingredients

2 packs HECK Bollywood Bangers                     

1 ripe mango, peeled, pitted and diced

1 small red onion, peeled and diced finely

1 small red chilli, seeded and finely diced

1 handful of chopped coriander

1 lime juiced

1 x 70g bag of rocket leaves

150g fat free Greek yoghurt

40g chopped cucumber, peeled, seeded and diced

10g chopped mint

Preparation time – 10 minutes

Cooking time – 10 minutes

Steps

To make the salsa, place the mango, red onion, red chilli, coriander and lime juice into a large bowl, and mix everything together, then place into a serving bowl and leave in the refrigerator until required.

To make the raita, mix the yoghurt, cucumber and mint in a bowl, and keep to one side until you’re ready to serve.

Pre-heat the grill to high.  Place the Bollywood Bites onto the grill tray and grill for around 10 minutes, turning the bites regularly until they’re nicely coloured and cooked all the way through.

To serve, take four serving plates and scatter some rocket leaves onto each plate.  Divide the balls equally onto each plate, and serve with the bowl of salsa and a bowl of yoghurt for people to share.
