The Indian flavours of the Bollywood Bangers work beautifully with a rice pilau. The flavours of this one are a fresh combination of lemon and mushrooms. This recipe is also suitable for vegans as well as vegetarians so everyone can enjoy this together!
1 pack HECK Bollywood Bangers
1 tbsp sunflower oil
1 garlic clove
4 spring onions
200g mushrooms (chestnut mushrooms work well here)
150gm basmati rice
375ml vegetable stock
1 tbsp chopped fresh parsley
Finely chop the garlic and slice the spring onions. Cook in a good sized saucepan over a medium heat for 2-3 minutes. Slice the mushrooms and add them to the pan cooking for another 3-4 minutes. Finally add the rice, zest and juice of the lemon and mix well. Pour over the stock and bring to a gentle boil. Reduce the heat so the mixture simmers and pop a lid on the sauce pan. Leave to cook for approx. 25 minutes, stirring occasionally, until the rice is cooked through.
Meanwhile, cook the Bollywood Bangers according to the pack instructions. Once the pilau is ready, stir through the chopped parsley. To serve, plate up generous spoonfuls of the pilau rice and top with the Bollywood Bites.
A spoonful of mango chutney and natural yoghurt mixed together make a perfect finishing touch to this dish.
