Bubble and Squeak is a great way of using up leftover veg from your Christmas Day feast and takes no time to cook up. If you’re feeling super indulgent you can always throw in a bit of grated cheese as well. And of course, serve up with HECK Family Favourite Sausages for the perfect post-Boxing-Day-walk feast!
2 packs HECK Family Favourite Sausages
600g cold mashed potato / crushed cold roast or boiled potatoes
400g leftover cooked veggies (sprouts, carrots, cabbage)
Optional extras - 2 tbsp cranberry sauce / bread sauce / gravy / grated cheese
Cook the HECK Family Favourite sausages according to the packet instructions.
In the meantime, finely chop the onion, slice the leek and cut up any of the leftover veg such as halving sprouts etc. Over a medium to high heat, cook the onion and leek in butter in a wide shallow pan until just beginning to colour. Now add the leftover veggies and the potato, mixing everything together well. Add any of the optional extras at this point such as some cranberry sauce, and cook for 8-10 minutes until piping hot.
If you’re adding some grated cheese, sprinkle over the bubble and squeak once you’ve plated up with the sausages.
Depending on the what you have leftover in the fridge, swap up the veggies so you could use parsnips in place of carrots, cabbage instead of sprouts.
