Fair & Square Sage Caramelised Onion & Chestnut Sausage Loaf

Serves 4 -6


One pack HECK Fair & Square Sausages

One knob of butter (about 15g)

10ml olive oil

One white onion diced

10-12 sage leaves chopped

Small handful parsley chopped

60g roughly chopped chestnuts

8 rashers smoked Sstreaky bacon (unsmoked will also work)


Heat a saucepan and add the butter, oil & diced onion; cook on a low heat for about 15 minutes until the onions are golden - when they are ready remove from the heat and set to one side.

In a mixing bowl add the sausages, herbs, chestnuts and cooked onions and, using your hands, mix all of the ingredients together.

Now lay cling film down on the work surface; enough to lay 8 bacon rashers lengthways on top of the cling film, leaving about 2-3 inches each side of the cling film.

Now with the bacon laid out evenly, place the sausage mix onto the middle of the bacon, then roll into a loaf - and using the extra cling film each side - tighten the loaf and place into the fridge for an hour (this could be done the night before).

Unroll the loaf and place onto a greased baking tray and cook in a pre-heated oven at 180C fan / 200C non-fan for 40-45 minutes.
