CHICKEN ITALIA BURGER WITH CHICKPEA SALAD

If you’re pushed for time on an evening and want a straight forward and healthy dish for supper, give this a go.  You don’t need a long list of obscure ingredients but you’ll end up with a bowl full of nutritious food, and tick the high protein / low fat boxes!  Chickpeas are a great source of protein along with lean chicken, and they have a very low glycaemic index so won’t spike your blood sugars.  Win Win!

Chicken Italia Burger with Chickpea Salad

Ingredients

1 pack HECK! Chicken Italia Burgers

1 large courgette

10 cherry tomatoes

400g tin of chickpeas, rinsed and drained

2 tbsp sweet chilli sauce

Salad leaves

Steps

Slice the courgettes into batons and sauté in a large shallow pan with a dash of oil or a few spritzes of lo-cal spray.  Cook over a medium heat until the courgettes start to colour.  Now add the cherry tomatoes, chickpeas and chilli sauce and continue to cook for a further 4-5 minutes.

In the meantime, cook the burgers according to the packet instructions.  Once the burgers are ready and piping hot throughout, fill 2 shallow bowls with salad leaves (we love fresh spinach or pea shoots!) and divide the chickpeas etc between the bowls.  Top with a buger and eat up quick J
