CHICKEN AND THYME SCOTCH EGGS

Although you might think that making a scotch egg from scratch is too complicated, using HECK! chicken burgers means most of the hard work is already done!  These make a great picnic or lunch option for meal prep, and of course you can use a gluten-free loaf for the breadcrumbs if needed. 

Chicken and Thyme Scotch Eggs

Cooking time 20 mins

Ingredients

4 x 114g HECK! Simply Chicken burgers

4 medium eggs

300g wholegrain breadcrumbs (GF as required)

Generous grind of black pepper

1 tbsp chopped fresh thyme

Steps

To boil the eggs, place in a saucepan of cold water and cover by at least an inch.  Pop a lid on the pan and bring to the boil then time for 6 minutes cooking.  Remove from the heat, drain and run under cold water for a few minutes to stop the eggs cooking.

Peel off the egg shells and pat dry with some kitchen towel.  Wrap the egg in a single chicken burger using both hands to roll it into an even sphere.  Set to one side until you have all 4 eggs ready to go.

In a large shallow bowl, mix the breadcrumbs, black pepper and thyme.  Now roll the eggs in the breadcrumbs until completely covered.  Pop onto a baking tray and into the oven at 170° for 18-20 mins, when the scotch eggs are golden brown.
