If you’re following a vegan diet, it doesn’t follow that you want to miss out on the comfort food options... why not try this plate of bangers and mash with an Indian twist? Easy to prepare and plenty of comfort here!
1 pack HECK Bollywood Bangers
300g sweet potato
2 garlic cloves (peeled)
100ml coconut milk
Cook the Bollywood bangers according to the packet instructions.
For the mash, peel and chop the carrots and sweet potato and place in a pan of cold water along with the garlic. Bring to the boil and simmer for 10-12 minutes until the vegetables are soft. Drain well and mash with the coconut milk, seasoning to taste.
Serve the sausages atop the mash with some spicy sweet chutney on the side.
