Vegan Scotch Egg

Prep time: 15mins - Cook Time: 20mins - Serves: 2 
Creamy avocado & punchy English mustard lie beneath our flavourful HECK Ultimate Vegan Burger mix. Coated in breadcrumbs and fresh herbs, bake for a taste sensation to be enjoyed by everyone!
  • 1 Pack Heck! Ultimate Vegan Burgers
  • 2 Avocados
  • 2 tbsp Vegan Mayonaise
  • 2 tsp English Mustard
  • 150g Vegan Breadcrumbs
  • 15g Fresh Parsley (chopped) 
  • 15g Fresh Chives (chopped) 
  1. Heat the oven to 170C and prepare the avocados. Half them lengthwise, remove the stone and peel
  2. Mix roughly, 2 tbsp of mayonnaise (vegan) with 2 tsp English mustard to create the vegan egg yolk and fill the avocados pit hole with the mixture
  3. Pour a small amount of oil onto work surface to avoid the burgers from sticking and start patting down the 2 burgers to create a big circle
  4. Bring the two halves back together and place on top of the flattened burgers. Using a spatula wrap the avocado with the flattened burger
  5. Roll in parsley, chive, breadcrumb mixture to create a good coating
  6. Place rolled scotch eggs onto baking tray lined with baking parchment and put into the oven for 20 minutes until golden brown
